  • Whole wheat pasta - 150 grams
  • Almonds, sliced - 50 grams
  • Saffron threads - 0.1 grams
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their flavor.
  2. Cook the whole wheat pasta in a pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced almonds, sautéing until the almonds are golden brown and fragrant, about 3-4 minutes.
  4. Pour in the vegetable broth and bring to a simmer. Add the soaked saffron along with its water, and stir well.
  5. Season the sauce with salt and black pepper to taste, then let it simmer for an additional 5 minutes to thicken slightly.
  6. Add the cooked pasta to the skillet, tossing it in the saffron-almond sauce until well coated.
  7. Remove from heat and finish with fresh parsley and a squeeze of lemon juice before serving.
