Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm water for about 10 minutes to release their flavor.
- Cook the whole wheat pasta in a pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sliced almonds, sautéing until the almonds are golden brown and fragrant, about 3-4 minutes.
- Pour in the vegetable broth and bring to a simmer. Add the soaked saffron along with its water, and stir well.
- Season the sauce with salt and black pepper to taste, then let it simmer for an additional 5 minutes to thicken slightly.
- Add the cooked pasta to the skillet, tossing it in the saffron-almond sauce until well coated.
- Remove from heat and finish with fresh parsley and a squeeze of lemon juice before serving.
