- Chopped fresh parsley - 2 tablespoons
- Lemon juice - 1 tablespoon
- Toasted almonds, chopped - 30 grams
Steps
- In a small bowl, soak the saffron threads in 2 tablespoons of warm vegetable broth for about 10 minutes to release their flavor.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until softened and translucent, about 3-4 minutes.
- Add the soaked saffron along with the broth, cinnamon stick, cumin powder, salt, and black pepper to the saucepan. Bring the mixture to a simmer.
- Add the gluten-free pasta to the simmering broth, stirring occasionally. Cook according to package instructions until al dente, usually about 8-10 minutes.
- Once the pasta is cooked, remove the cinnamon stick and stir in the lemon juice and chopped parsley. Adjust seasoning if necessary.
