Ingredients

  • Garlic, minced - 2 cloves
  • Saffron threads - 1/4 teaspoon
  • Vegetable broth - 500 ml
  • Cinnamon stick - 1 small
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Chopped fresh parsley - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Toasted almonds, chopped - 30 grams

Steps

  1. In a small bowl, soak the saffron threads in 2 tablespoons of warm vegetable broth for about 10 minutes to release their flavor.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped shallot and minced garlic, sautéing until softened and translucent, about 3-4 minutes.
  3. Add the soaked saffron along with the broth, cinnamon stick, cumin powder, salt, and black pepper to the saucepan. Bring the mixture to a simmer.
  4. Add the gluten-free pasta to the simmering broth, stirring occasionally. Cook according to package instructions until al dente, usually about 8-10 minutes.
  5. Once the pasta is cooked, remove the cinnamon stick and stir in the lemon juice and chopped parsley. Adjust seasoning if necessary.
