Ingredients
- Pasta - 200 grams (spaghetti or penne)
- Eggplant - 1 medium (about 250 grams), diced
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Onion - 1 small, finely chopped
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Chickpeas - 1 can (400 grams), drained and rinsed
- Tomato paste - 2 tablespoons
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 220°C (428°F).
- In a bowl, toss the diced eggplant with 1 tablespoon of olive oil, salt, and pepper. Spread the eggplant on a baking sheet and roast in the oven for 20-25 minutes until golden and tender.
- While the eggplant is roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, cumin, cinnamon, and paprika to the skillet. Stir for 1-2 minutes until fragrant.
- Add the chickpeas, tomato paste, and vegetable broth to the skillet. Stir well and simmer for 5-7 minutes until slightly thickened.
- Once the eggplant is done roasting, add it to the skillet and mix gently to combine.
- Add the cooked pasta to the skillet and toss everything together until well combined. Adjust seasoning with salt and pepper as desired.
- Serve hot, garnished with chopped fresh parsley.
