Ingredients

  • Pasta - 200 grams (spaghetti or penne)
  • Eggplant - 1 medium (about 250 grams), diced
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Onion - 1 small, finely chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Chickpeas - 1 can (400 grams), drained and rinsed
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a bowl, toss the diced eggplant with 1 tablespoon of olive oil, salt, and pepper. Spread the eggplant on a baking sheet and roast in the oven for 20-25 minutes until golden and tender.
  3. While the eggplant is roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
  4. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  5. Add the minced garlic, cumin, cinnamon, and paprika to the skillet. Stir for 1-2 minutes until fragrant.
  6. Add the chickpeas, tomato paste, and vegetable broth to the skillet. Stir well and simmer for 5-7 minutes until slightly thickened.
  7. Once the eggplant is done roasting, add it to the skillet and mix gently to combine.
  8. Add the cooked pasta to the skillet and toss everything together until well combined. Adjust seasoning with salt and pepper as desired.
  9. Serve hot, garnished with chopped fresh parsley.
