- Pasta (spaghetti or linguine) - 160 grams
- Raisins - 50 grams
- Mixed nuts (almonds, walnuts, pistachios) - 50 grams, chopped
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Ground cinnamon - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Vegetable broth - 250 ml
Steps
- Cook the pasta according to package instructions in salted water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the chopped nuts and cook for 2-3 minutes until they are lightly toasted.
- Add the raisins, ground cinnamon, ground cumin, salt, and black pepper. Stir well to combine.
- Pour in the vegetable broth and bring to a simmer. Let it cook for 5 minutes to allow the flavors to meld.
- Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce.
- Remove from heat and stir in the chopped parsley before serving.
