Ingredients

  • Pasta (spaghetti or linguine) - 160 grams
  • Raisins - 50 grams
  • Mixed nuts (almonds, walnuts, pistachios) - 50 grams, chopped
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cinnamon - 1/2 teaspoon
  • Ground cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 250 ml

Steps

  1. Cook the pasta according to package instructions in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for another minute until fragrant.
  4. Stir in the chopped nuts and cook for 2-3 minutes until they are lightly toasted.
  5. Add the raisins, ground cinnamon, ground cumin, salt, and black pepper. Stir well to combine.
  6. Pour in the vegetable broth and bring to a simmer. Let it cook for 5 minutes to allow the flavors to meld.
  7. Add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce.
  8. Remove from heat and stir in the chopped parsley before serving.
