- Vegetable broth - 200 ml
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Bring a pot of salted water to a boil and cook the gluten-free pasta according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute, until fragrant.
- Stir in the diced carrot and zucchini, cooking for about 5-7 minutes until they are tender.
- Add the raisins, ground cumin, ground cinnamon, salt, and black pepper to the skillet, stirring well to combine.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 5 minutes to allow the flavors to meld.
- Add the cooked pasta to the skillet, tossing gently to coat it in the sauce and heat through for 2-3 minutes.
- Remove from heat and garnish with chopped fresh parsley before serving.
