Ingredients

  • Red onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground cinnamon - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Vegetable broth - 250 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, ground cumin, ground cinnamon, and chili powder to the skillet. Stir continuously for about 1-2 minutes until fragrant.
  4. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for 5 minutes to allow the flavors to meld.
  5. Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
  6. Remove from heat and stir in the fresh parsley, pomegranate seeds, lemon juice, salt, and black pepper to taste.
  7. Serve the pasta warm, garnished with extra pomegranate seeds and parsley if desired.
