- Chili powder - 1/2 teaspoon
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, ground cumin, ground cinnamon, and chili powder to the skillet. Stir continuously for about 1-2 minutes until fragrant.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for 5 minutes to allow the flavors to meld.
- Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for an additional 2-3 minutes until heated through.
- Remove from heat and stir in the fresh parsley, pomegranate seeds, lemon juice, salt, and black pepper to taste.
- Serve the pasta warm, garnished with extra pomegranate seeds and parsley if desired.
