Ingredients

  • Whole wheat pasta - 150 grams
  • Green olives, pitted and sliced - 100 grams
  • Almonds, sliced - 50 grams
  • Cherry tomatoes, halved - 100 grams
  • Garlic, minced - 2 cloves
  • Olive oil - 2 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Red chili flakes - optional, to taste

Steps

  1. Bring a pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the sliced almonds to the skillet and toast them for about 3-4 minutes until golden brown, stirring frequently to prevent burning.
  4. Stir in the halved cherry tomatoes and sliced green olives, cooking for an additional 3-4 minutes until the tomatoes begin to soften.
  5. Add the cooked pasta to the skillet, along with the lemon juice, chopped parsley, salt, black pepper, and red chili flakes if using. Toss everything together to combine well and heat through for about 2 minutes.
  6. Serve immediately, garnished with extra parsley and a drizzle of olive oil if desired.
