- Gluten-free pasta - 150 grams
- Green olives, pitted and sliced - 100 grams
- Black olives, pitted and sliced - 50 grams
- Cherry tomatoes, halved - 150 grams
- Garlic, minced - 2 cloves
- Red onion, finely chopped - 1 small
- Olive oil - 3 tablespoons
- Fresh parsley, chopped - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente, about 8-10 minutes.
- While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
- Add the chopped red onion and minced garlic to the skillet and sauté for about 3 minutes until softened.
- Stir in the cherry tomatoes, sliced green and black olives, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes start to soften.
- Drain the pasta and add it to the skillet with the olive mixture. Toss everything together over low heat for 2-3 minutes to combine the flavors.
- Remove from heat and stir in the lemon juice and chopped parsley. Adjust seasoning if needed.
- Serve warm, garnished with extra parsley if desired.
