Ingredients

  • Gluten-free pasta - 150 grams
  • Green olives, pitted and sliced - 100 grams
  • Black olives, pitted and sliced - 50 grams
  • Cherry tomatoes, halved - 150 grams
  • Garlic, minced - 2 cloves
  • Red onion, finely chopped - 1 small
  • Olive oil - 3 tablespoons
  • Fresh parsley, chopped - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
  3. Add the chopped red onion and minced garlic to the skillet and sauté for about 3 minutes until softened.
  4. Stir in the cherry tomatoes, sliced green and black olives, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes until the tomatoes start to soften.
  5. Drain the pasta and add it to the skillet with the olive mixture. Toss everything together over low heat for 2-3 minutes to combine the flavors.
  6. Remove from heat and stir in the lemon juice and chopped parsley. Adjust seasoning if needed.
  7. Serve warm, garnished with extra parsley if desired.
