Ingredients

  • Pasta (spaghetti or linguine) - 150 grams
  • Extra virgin olive oil - 50 ml
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)

Steps

  1. Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
  2. While the pasta is cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
  3. Once the pasta is done, reserve a cup of the pasta water and then drain the pasta.
  4. Add the drained pasta to the skillet with the garlic oil. Toss to coat the pasta evenly.
  5. Add the chopped parsley, lemon juice, salt, black pepper, and red pepper flakes (if using). Toss again, adding a bit of the reserved pasta water to create a silky sauce if needed.
  6. Serve immediately, garnished with additional parsley if desired.
