- Bell pepper (red or yellow) - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Chickpeas (cooked) - 1 cup
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the diced red onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
- Stir in the diced bell pepper, zucchini, and carrot. Sauté the vegetables for about 5-7 minutes until they start to soften.
- Add the halved cherry tomatoes and cooked chickpeas to the skillet. Stir in the ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
- Add the cooked pasta to the skillet and toss everything together until well combined. Drizzle with lemon juice and adjust seasoning if necessary.
- Serve the pasta warm, garnished with chopped fresh cilantro.
