  • Carrot, julienned - 1 medium
  • Zucchini, diced - 1 medium
  • Spinach, fresh - 100 grams
  • Kale, chopped - 100 grams
  • Cilantro, chopped - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Chickpeas, cooked - 100 grams

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and sauté for an additional 1 minute until fragrant.

  5. Add the chopped kale and cook for another 3 minutes until wilted.
  6. Fold in the fresh spinach and cooked chickpeas, stirring until the spinach has wilted.
  7. Season the mixture with cumin, cinnamon, salt, and black pepper, mixing well to combine all flavors.
  8. Add the cooked pasta to the skillet, drizzle with lemon juice, and toss everything together until well combined and heated through.
