- Fresh mint leaves - 30 grams, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon - 1, juiced and zested
- Salt - to taste
- Black pepper - to taste
- Pine nuts - 30 grams, toasted
Steps
- Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
- In a large bowl, combine Greek yogurt, minced garlic, lemon juice, lemon zest, and chopped mint. Mix well until smooth and creamy.
- Add the cooked pasta to the yogurt mixture and toss to combine. If the mixture seems too thick, add a splash of reserved pasta water to reach the desired consistency.
- Drizzle the olive oil over the pasta and season with salt and black pepper to taste. Mix well.
- Serve the pasta warm or at room temperature, topped with toasted pine nuts and additional mint leaves for garnish.
