Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Greek yogurt - 150 grams
  • Fresh mint leaves - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon - 1, juiced and zested
  • Salt - to taste
  • Black pepper - to taste
  • Pine nuts - 30 grams, toasted

Steps

  1. Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente. Drain and set aside, reserving a little pasta water.
  2. In a large bowl, combine Greek yogurt, minced garlic, lemon juice, lemon zest, and chopped mint. Mix well until smooth and creamy.
  3. Add the cooked pasta to the yogurt mixture and toss to combine. If the mixture seems too thick, add a splash of reserved pasta water to reach the desired consistency.
  4. Drizzle the olive oil over the pasta and season with salt and black pepper to taste. Mix well.
  5. Serve the pasta warm or at room temperature, topped with toasted pine nuts and additional mint leaves for garnish.
