- Whole wheat pasta - 150 grams
- Fresh peas - 100 grams
- Fresh mint leaves - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Parmesan cheese - 30 grams, grated (optional)
- Pine nuts - 2 tablespoons, toasted (optional)
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente.
- In the last 3 minutes of cooking, add the fresh peas to the pasta pot.
- While the pasta and peas are cooking, heat olive oil in a small skillet over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Drain the pasta and peas, reserving a small cup of the cooking water.
- In a large mixing bowl, combine the drained pasta and peas with the sautéed garlic, chopped mint, lemon juice, salt, and black pepper. Toss well to combine, adding reserved pasta water if needed for moisture.
- Serve immediately, topped with grated Parmesan cheese and toasted pine nuts if desired.
