Ingredients

  • Gluten-free pasta - 150 grams
  • Fresh mint leaves - 30 grams, chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 150 grams, halved
  • Feta cheese - 50 grams, crumbled
  • Pine nuts - 30 grams, toasted

Steps

  1. Boil a pot of salted water and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add the cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften.
  4. Stir in the cooked pasta, chopped mint, lemon juice, ground cumin, salt, and black pepper. Mix well to combine all ingredients.
  5. Remove from heat and fold in the crumbled feta cheese and toasted pine nuts before serving.
