- Garlic - 2 cloves, minced
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 150 grams, halved
- Feta cheese - 50 grams, crumbled
- Pine nuts - 30 grams, toasted
Steps
- Boil a pot of salted water and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1-2 minutes until fragrant.
- Add the cherry tomatoes to the skillet and cook for another 3-4 minutes until they soften.
- Stir in the cooked pasta, chopped mint, lemon juice, ground cumin, salt, and black pepper. Mix well to combine all ingredients.
- Remove from heat and fold in the crumbled feta cheese and toasted pine nuts before serving.
