- Zucchini - 1 medium, diced
- Harissa paste - 2 tablespoons
- Canned tomatoes - 400 grams, crushed
- Chickpeas - 1 can (400 grams), drained and rinsed
- Spinach - 100 grams, fresh
- Lemon juice - 1 tablespoon
- Salt - to taste
- Pepper - to taste
- Fresh cilantro - for garnish
Steps
- Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the diced red bell pepper and zucchini to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.
- Stir in the harissa paste and cook for another minute to release its flavors.
- Add the crushed tomatoes and chickpeas to the skillet. Bring to a simmer and let it cook for about 10 minutes, allowing the sauce to thicken.
- Add the fresh spinach and lemon juice to the sauce, stirring until the spinach wilts.
- Combine the cooked pasta with the harissa sauce, mixing well to coat the pasta evenly. Season with salt and pepper to taste.
