  • Pasta - 160 grams (spaghetti or penne)

  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Harissa paste - 2 tablespoons
  • Canned tomatoes - 400 grams, crushed
  • Chickpeas - 1 can (400 grams), drained and rinsed
  • Spinach - 100 grams, fresh
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are softened.
  4. Stir in the harissa paste and cook for another minute to release its flavors.
  5. Add the crushed tomatoes and chickpeas to the skillet. Bring to a simmer and let it cook for about 10 minutes, allowing the sauce to thicken.
  6. Add the fresh spinach and lemon juice to the sauce, stirring until the spinach wilts.
  7. Combine the cooked pasta with the harissa sauce, mixing well to coat the pasta evenly. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh cilantro.
