- Harissa paste - 2 tablespoons

- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Zucchini - 1 small, diced
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams, fresh
- Feta cheese - 50 grams, crumbled
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the diced red bell pepper and zucchini to the skillet, cooking for about 4-5 minutes until they begin to soften.
- Stir in the halved cherry tomatoes and cook for an additional 3 minutes until they start to release their juices.
- Add the harissa paste to the skillet, stirring well to combine with the vegetables.
- Add the cooked gluten-free pasta and fresh spinach to the skillet, tossing everything together until the spinach wilts and the pasta is coated with the sauce.
- Season with salt and black pepper to taste. Remove from heat.
- Serve the pasta warm, topped with crumbled feta cheese and chopped parsley.
