Ingredients

  • Gluten-free pasta - 200 grams
  • Harissa paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, diced
  • Zucchini - 1 small, diced
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams, fresh
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a large pot of salted water to a boil and cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the diced red bell pepper and zucchini to the skillet, cooking for about 4-5 minutes until they begin to soften.
  4. Stir in the halved cherry tomatoes and cook for an additional 3 minutes until they start to release their juices.
  5. Add the harissa paste to the skillet, stirring well to combine with the vegetables.
  6. Add the cooked gluten-free pasta and fresh spinach to the skillet, tossing everything together until the spinach wilts and the pasta is coated with the sauce.
  7. Season with salt and black pepper to taste. Remove from heat.
  8. Serve the pasta warm, topped with crumbled feta cheese and chopped parsley.
