  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1/2 teaspoon

  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Vegetable broth - 200ml

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced fennel and sauté for about 5 minutes until it begins to soften.
  3. Add the julienned carrots and minced garlic to the skillet, cooking for another 5 minutes until the carrots are tender.
  4. Stir in the ground cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2 minutes to allow the spices to bloom.
  5. Pour in the vegetable broth and bring the mixture to a gentle simmer. Let it cook for about 5 minutes, allowing the flavors to meld.
  6. Add the cooked pasta to the skillet, tossing to combine with the fennel and carrot mixture. Cook for another 2-3 minutes until heated through.
  7. Remove from heat and stir in the fresh parsley and lemon juice. Adjust seasoning with salt and pepper if needed.
  8. Serve warm, garnished with additional parsley if desired.
