  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Chili flakes - ½ teaspoon
  • Vegetable broth - 250 ml
  • Cherry tomatoes - 200 grams, halved
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced

Steps

  1. Boil a pot of salted water and cook the gluten-free pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the sliced fennel. Sauté for 5-7 minutes until it starts to soften.
  3. Add the minced garlic to the skillet and sauté for another minute until fragrant.
  4. Stir in the ground cumin, ground coriander, and chili flakes, cooking for an additional minute to toast the spices.
