- Gluten-free pasta - 150 grams
- Fennel bulb - 1 medium, thinly sliced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Chili flakes - ½ teaspoon
- Vegetable broth - 250 ml
- Cherry tomatoes - 200 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
Steps
- Boil a pot of salted water and cook the gluten-free pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat and add the sliced fennel. Sauté for 5-7 minutes until it starts to soften.
- Add the minced garlic to the skillet and sauté for another minute until fragrant.
- Stir in the ground cumin, ground coriander, and chili flakes, cooking for an additional minute to toast the spices.
- Pour in the vegetable broth and bring to a simmer. Add the halved cherry tomatoes and cook for 5 minutes until they soften.
- Add the cooked pasta to the skillet, tossing to combine. Season with salt, black pepper, and lemon juice to taste.
- Remove from heat and stir in the chopped parsley before serving.
