  • Onion - 1 small, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. 1. Preheat the oven to 200°C (400°F).
  2. 2. Toss the diced eggplant with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast in the preheated oven for 20 minutes, or until golden and tender.
