- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- 1. Preheat the oven to 200°C (400°F).
- 2. Toss the diced eggplant with 1 tablespoon of olive oil, salt, and pepper. Spread evenly on a baking sheet and roast in the preheated oven for 20 minutes, or until golden and tender.
- 3. While the eggplant is roasting, cook the pasta according to package instructions until al dente. Drain and set aside.
- 4. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- 5. Add the diced tomatoes, cumin, and paprika to the skillet. Cook for another 5 minutes, allowing the tomatoes to soften and create a sauce.
- 6. Once the eggplant is roasted, add it to the skillet with the tomato mixture. Stir to combine and heat through for an additional 2-3 minutes.
- 7. Add the cooked pasta to the skillet, tossing everything together until well mixed and heated. Adjust seasoning with salt and pepper to taste.
- 8. Serve hot, garnished with chopped fresh parsley.
