  • Onion - 1 small, finely chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Vegetable broth - 250 milliliters
  • Chickpeas - 100 grams, canned and rinsed
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Stir in the cumin, cinnamon, and paprika, cooking for another minute to toast the spices.
  5. Pour in the vegetable broth and bring to a simmer. Add the chopped dates and chickpeas, cooking for about 5 minutes until heated through.
  6. Combine the cooked pasta with the date mixture in the skillet, tossing to coat evenly. Season with salt and pepper to taste.
  7. Remove from heat and stir in the chopped parsley and lemon juice before serving.
