Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Medjool dates (pitted and chopped) - 100 grams
  • Walnuts (chopped) - 50 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Fresh parsley (chopped) - 2 tablespoons
  • Cinnamon - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Add the chopped dates, walnuts, cinnamon, and cumin to the skillet. Stir well and cook for another 2-3 minutes until the dates soften.
  4. Add the cooked pasta to the skillet and toss everything together to combine. Season with salt and black pepper to taste.
  5. Remove from heat and stir in the lemon juice and chopped parsley. Serve warm.
