- Pasta (spaghetti or linguine) - 200 grams
- Medjool dates (pitted and chopped) - 100 grams
- Walnuts (chopped) - 50 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Fresh parsley (chopped) - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the chopped dates, walnuts, cinnamon, and cumin to the skillet. Stir well and cook for another 2-3 minutes until the dates soften.
- Add the cooked pasta to the skillet and toss everything together to combine. Season with salt and black pepper to taste.
- Remove from heat and stir in the lemon juice and chopped parsley. Serve warm.
