- Canned chickpeas - 400 grams, drained and rinsed

- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Carrot, diced - 1 medium
- Red bell pepper, diced - 1 medium
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Vegetable broth - 400 milliliters
- Fresh parsley, chopped - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Lemon wedges - for serving
Steps
- In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In the same pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced carrot, and red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
- Stir in the ground cumin, coriander, paprika, and cinnamon, and cook for 1 minute until fragrant.
- Add the drained chickpeas and vegetable broth to the pot. Bring to a gentle simmer and let cook for about 10 minutes, allowing the flavors to meld.
- Season with salt and black pepper to taste. Add the cooked pasta to the pot and stir to combine.
- Remove from heat and fold in the chopped parsley.
