  • Canned chickpeas - 400 grams, drained and rinsed
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Carrot, diced - 1 medium
  • Red bell pepper, diced - 1 medium
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Vegetable broth - 400 milliliters
  • Fresh parsley, chopped - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Lemon wedges - for serving

Steps

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In the same pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced carrot, and red bell pepper to the pot. Cook for another 5 minutes, stirring occasionally.
  4. Stir in the ground cumin, coriander, paprika, and cinnamon, and cook for 1 minute until fragrant.
  5. Add the drained chickpeas and vegetable broth to the pot. Bring to a gentle simmer and let cook for about 10 minutes, allowing the flavors to meld.
  6. Season with salt and black pepper to taste. Add the cooked pasta to the pot and stir to combine.
  7. Remove from heat and fold in the chopped parsley.
