Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cayenne pepper - 1/4 teaspoon
- Lemon juice - 2 tablespoons
- Olive oil - 3 tablespoons
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes - 150 grams, halved
- Kalamata olives - 50 grams, pitted and sliced
- Pine nuts - 30 grams, toasted
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
- In a mixing bowl, combine the chopped parsley, cilantro, minced garlic, ground cumin, ground coriander, paprika, cayenne pepper, lemon juice, olive oil, salt, and black pepper to create the chermoula sauce.
- In a large skillet over medium heat, add the chermoula sauce and cook for 2-3 minutes until fragrant.
- Add the cherry tomatoes and olives to the skillet, stirring gently to combine with the sauce. Cook for another 2-3 minutes until the tomatoes start to soften.
- Add the cooked pasta to the skillet, tossing to coat in the chermoula sauce. If the pasta seems dry, add a splash of the reserved pasta water.
- Remove from heat, sprinkle with toasted pine nuts, and serve immediately, garnished with extra fresh herbs if desired.
