Ingredients

  • Gluten-free pasta - 150 grams
  • Cauliflower florets - 200 grams
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Garlic - 2 cloves, minced
  • Vegetable broth - 250 milliliters
  • Fresh cilantro - 1/4 cup, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, toss the cauliflower florets with 1 tablespoon of olive oil, cumin, coriander, paprika, minced garlic, salt, and black pepper.
  3. Spread the seasoned cauliflower on a baking sheet and roast for 20 minutes, or until tender and slightly golden.
  4. While the cauliflower is roasting, cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  5. In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the roasted cauliflower and vegetable broth, stirring to combine.
  6. Let it simmer for about 5 minutes to warm through and allow the flavors to meld.
  7. Add the cooked pasta to the skillet, along with the chopped cilantro and lemon juice. Toss everything gently until well combined.
  8. Taste and adjust seasoning with more salt and pepper if needed. Serve warm, garnished with additional cilantro if desired.
