- Whole wheat pasta - 200 grams
- Olive oil - 2 tablespoons
- Yellow onion - 2 medium, thinly sliced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Chili flakes - 1/4 teaspoon
- Vegetable broth - 250 milliliters
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt; cook, stirring occasionally, until they are soft and caramelized, about 15-20 minutes.
- Add the minced garlic, ground cumin, cinnamon, and chili flakes to the skillet. Stir and cook for another 2-3 minutes until fragrant.
- Pour in the vegetable broth, scraping any browned bits from the bottom of the skillet. Allow to simmer for about 5 minutes to let the flavors meld.
- Add the cooked pasta to the skillet and toss to coat in the onion mixture. Season with salt and black pepper to taste.
- Remove from heat, stir in the fresh parsley and lemon juice, and serve warm.
