Ingredients

  • Whole wheat pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Yellow onion - 2 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Chili flakes - 1/4 teaspoon
  • Vegetable broth - 250 milliliters
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and a pinch of salt; cook, stirring occasionally, until they are soft and caramelized, about 15-20 minutes.
  3. Add the minced garlic, ground cumin, cinnamon, and chili flakes to the skillet. Stir and cook for another 2-3 minutes until fragrant.
  4. Pour in the vegetable broth, scraping any browned bits from the bottom of the skillet. Allow to simmer for about 5 minutes to let the flavors meld.
  5. Add the cooked pasta to the skillet and toss to coat in the onion mixture. Season with salt and black pepper to taste.
  6. Remove from heat, stir in the fresh parsley and lemon juice, and serve warm.
