Ingredients

  • Pasta (spaghetti or linguine) - 200 grams
  • Artichoke hearts (canned or jarred) - 150 grams
  • Olive oil - 3 tablespoons
  • Garlic (minced) - 2 cloves
  • Ground cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Cherry tomatoes (halved) - 100 grams
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Grated Parmesan cheese (optional) - 30 grams

Steps

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a bit of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the ground cumin, cinnamon, paprika, salt, and black pepper to the skillet. Stir well for about 30 seconds to toast the spices.
  4. Add the artichoke hearts and cherry tomatoes to the skillet, stirring to combine. Cook for about 5-7 minutes until the tomatoes start to soften.
  5. Add the cooked pasta to the skillet, along with a splash of the reserved pasta water and lemon juice. Toss everything together until well combined and heated through.
  6. Remove from heat and stir in the chopped parsley. Adjust seasoning with more salt and pepper if necessary.
  7. Serve warm, topped with grated Parmesan cheese if desired.
