- Artichoke hearts (canned or jarred) - 150 grams
- Olive oil - 3 tablespoons
- Garlic (minced) - 2 cloves
- Ground cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Cherry tomatoes (halved) - 100 grams
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 1 tablespoon
- Grated Parmesan cheese (optional) - 30 grams
Steps
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a bit of the pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the ground cumin, cinnamon, paprika, salt, and black pepper to the skillet. Stir well for about 30 seconds to toast the spices.
- Add the artichoke hearts and cherry tomatoes to the skillet, stirring to combine. Cook for about 5-7 minutes until the tomatoes start to soften.
- Add the cooked pasta to the skillet, along with a splash of the reserved pasta water and lemon juice. Toss everything together until well combined and heated through.
- Remove from heat and stir in the chopped parsley. Adjust seasoning with more salt and pepper if necessary.
- Serve warm, topped with grated Parmesan cheese if desired.
