  • Vegetable broth - 300 ml
  • Toasted almonds - 30 grams, roughly chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the gluten-free pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté until soft and translucent, about 5 minutes.
  3. Stir in the minced garlic, cinnamon, ground cumin, salt, and black pepper. Cook for another minute until fragrant.
  4. Add the chopped dried apricots and vegetable broth to the skillet. Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the apricots to soften.
