- Canned chickpeas, drained and rinsed - 240 grams
- Tomato paste - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon

- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Vegetable broth - 500 milliliters
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced bell pepper, carrot, and zucchini to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Stir in the canned chickpeas, tomato paste, cumin, paprika, cinnamon, salt, and black pepper. Cook for another 2-3 minutes, allowing the spices to toast slightly.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 5 minutes to blend the flavors.
- Add the cooked pasta to the skillet, mixing well to combine everything. Cook for an additional 2 minutes to heat through.
- Remove from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
- Serve hot, garnished with additional parsley if desired.
