  • Bell pepper, diced - 1 medium
  • Carrot, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Canned chickpeas, drained and rinsed - 240 grams
  • Tomato paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon powder - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Vegetable broth - 500 milliliters

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Add the diced bell pepper, carrot, and zucchini to the skillet. Cook for about 5-7 minutes, stirring occasionally, until the vegetables are tender.
  4. Stir in the canned chickpeas, tomato paste, cumin, paprika, cinnamon, salt, and black pepper. Cook for another 2-3 minutes, allowing the spices to toast slightly.
  5. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 5 minutes to blend the flavors.
  6. Add the cooked pasta to the skillet, mixing well to combine everything. Cook for an additional 2 minutes to heat through.
  7. Remove from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
  8. Serve hot, garnished with additional parsley if desired.
