Ingredients
- whole wheat pasta - 150 grams
- lamb shoulder, diced - 200 grams
- olive oil - 2 tablespoons
- onion, finely chopped - 1 medium
- garlic, minced - 2 cloves
- carrot, diced - 1 medium
- canned chickpeas, drained - 100 grams
- diced tomatoes - 400 grams
- Moroccan spice mix (cumin, coriander, cinnamon) - 2 teaspoons
- salt - 1 teaspoon
- pepper - 1/2 teaspoon
- fresh parsley, chopped - 2 tablespoons
- lemon juice - 1 tablespoon
Steps
- In a large pot, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent, about 3-4 minutes.
- Add the diced lamb to the skillet and brown on all sides, about 5-7 minutes.
- Stir in the diced carrot, canned chickpeas, diced tomatoes, Moroccan spice mix, salt, and pepper. Bring to a simmer.
- Cover and cook on low heat for 20-25 minutes until the lamb is tender.
- Once cooked, stir in the chopped parsley and lemon juice.
- Serve the lamb sauce over the cooked pasta, garnishing with extra parsley if desired.
