Steps
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spatula.
- Stir in the chopped red bell pepper, diced carrot, and zucchini. Cook for about 5 minutes until the vegetables are tender.
- Add the tomato paste, cumin, coriander, paprika, salt, and black pepper, mixing well to coat the vegetables and meat.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld.
- Add the cooked pasta to the skillet, tossing to combine everything evenly. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and stir in the chopped cilantro and lemon juice before serving.
