  • Ground halal beef - 150 grams
  • Red bell pepper (chopped) - 1 medium
  • Carrot (diced) - 1 medium
  • Zucchini (diced) - 1 medium
  • Tomato paste - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 300 milliliters
  • Fresh cilantro (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  3. Add the ground beef to the skillet and cook until browned, breaking it up with a spatula.
  4. Stir in the chopped red bell pepper, diced carrot, and zucchini. Cook for about 5 minutes until the vegetables are tender.
  5. Add the tomato paste, cumin, coriander, paprika, salt, and black pepper, mixing well to coat the vegetables and meat.
  6. Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld.
  7. Add the cooked pasta to the skillet, tossing to combine everything evenly. Cook for an additional 2-3 minutes to heat through.
  8. Remove from heat and stir in the chopped cilantro and lemon juice before serving.
