  • Red bell pepper, diced - 1 medium

  • Tomato paste - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Ground paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpeas (cooked) - 100 grams
  • Fresh parsley, chopped - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the pasta according to the package instructions in a large pot of salted boiling water until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced red bell pepper to the skillet. Cook for an additional 3 minutes until softened.
  4. Stir in the diced tomatoes and tomato paste, followed by the ground cumin, paprika, salt, and black pepper. Cook for about 10 minutes, allowing the mixture to simmer and thicken.
  5. Add the cooked chickpeas to the sauce and stir to combine, cooking for another 2-3 minutes until heated through.
  6. Add the cooked pasta to the skillet and toss well to coat with the sauce. Remove from heat.
