Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Onion (sliced) - 1 medium
  • Red bell pepper (sliced) - 1
  • Zucchini (sliced) - 1 medium
  • Carrot (julienned) - 1 medium
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Water - 2 liters

Steps

  1. Bring 2 liters of water to a boil in a large pot. Add a pinch of salt, then cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sliced onion, sauté for 2-3 minutes until fragrant.
  3. Add the sliced red bell pepper, zucchini, and carrot to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
  4. Stir in the cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.
  5. Add the cooked pasta to the skillet and toss to combine with the vegetable and spice mix.
  6. Remove from heat and stir in the lemon juice and chopped parsley. Adjust seasoning as needed.
  7. Serve warm, garnished with additional parsley if desired.
