Ingredients
- Pasta (fusilli or penne) - 200 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Onion (sliced) - 1 medium
- Red bell pepper (sliced) - 1
- Zucchini (sliced) - 1 medium
- Carrot (julienned) - 1 medium
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley (chopped) - 2 tablespoons
- Lemon juice - 2 tablespoons
- Water - 2 liters
Steps
- Bring 2 liters of water to a boil in a large pot. Add a pinch of salt, then cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sliced onion, sauté for 2-3 minutes until fragrant.
- Add the sliced red bell pepper, zucchini, and carrot to the skillet. Cook for 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Stir in the cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2 minutes to toast the spices.
- Add the cooked pasta to the skillet and toss to combine with the vegetable and spice mix.
- Remove from heat and stir in the lemon juice and chopped parsley. Adjust seasoning as needed.
- Serve warm, garnished with additional parsley if desired.
