Ingredients
- Dried chickpeas - 100 grams
- Red lentils - 100 grams
- Pasta (penne or fusilli) - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Canned diced tomatoes - 400 grams
- Vegetable broth - 500 ml
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon wedges - for serving
Steps
- Soak the dried chickpeas in water overnight. Drain and rinse before using.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté until softened, about 5 minutes.
- Stir in the soaked chickpeas, red lentils, canned diced tomatoes, vegetable broth, cumin, coriander, paprika, cinnamon, salt, and black pepper. Bring to a boil, then reduce heat to low and simmer for about 25 minutes, or until the chickpeas are tender.
- While the soup is simmering, cook the pasta according to package instructions in a separate pot until al dente. Drain and set aside.
- Once the chickpeas are tender, stir in the cooked pasta and chopped parsley. Adjust seasoning if necessary and heat through for another 2-3 minutes.
- Serve hot, garnished with fresh parsley and lemon wedges on the side.
