- Pasta (any preferred type) - 160 grams
- Olive oil - 2 tablespoons
- Red bell pepper - 1, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Garlic - 3 cloves, minced
- Onion - 1 small, finely chopped
- Ground cumin - 1 teaspoon
- Ground cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Chickpeas (canned, drained and rinsed) - 240 grams
- Vegetable broth - 250 ml
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the diced red bell pepper, zucchini, and carrot. Cook for 5-7 minutes until the vegetables are tender.
- Add the ground cumin, cinnamon, and paprika to the skillet, stirring well to coat the vegetables with the spices.
- Add the drained chickpeas and vegetable broth to the skillet. Bring the mixture to a simmer and cook for 5 minutes to let the flavors meld.
- Season with salt and black pepper to taste.
- Combine the cooked pasta with the vegetable and chickpea mixture, tossing gently to incorporate everything.
- Serve warm, garnished with fresh parsley.
