  • Red bell pepper (diced) - 1 medium
  • Zucchini (diced) - 1 medium
  • Carrot (diced) - 1 medium
  • Tomato paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 ml
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon (for garnish) - 1 slice

Steps

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  3. Add the chicken cubes to the skillet, cooking until browned on all sides, about 5-7 minutes.
  4. Stir in the red bell pepper, zucchini, and carrot, cooking for an additional 5 minutes until the vegetables start to soften.
  5. Add the tomato paste, cumin, coriander, paprika, salt, and black pepper. Mix well to coat the chicken and vegetables with the spices.
  6. Pour in the chicken broth, bringing the mixture to a simmer. Let it cook for another 5-7 minutes until the sauce thickens slightly.
  7. Add the cooked pasta to the skillet, tossing to combine everything evenly. Cook for an additional 2-3 minutes to heat through.
  8. Remove from heat, stir in the chopped parsley, and serve warm, garnished with a slice of lemon.
