Ingredients
- Pasta (spaghetti or linguine) - 200 grams
- Ground lamb or beef - 200 grams
- Onion (finely chopped) - 1 medium
- Garlic (minced) - 2 cloves
- Fresh parsley (chopped) - 2 tablespoons
- Cumin (ground) - 1 teaspoon
- Coriander (ground) - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Canned tomatoes (crushed) - 400 grams
- Vegetable broth - 150 ml
- Chickpeas (cooked) - 100 grams
- Lemon juice - 1 tablespoon
Steps
- In a large bowl, combine ground lamb or beef, half of the chopped onion, garlic, parsley, cumin, coriander, paprika, salt, and black pepper. Mix well and form into small meatballs, about 2.5 cm in diameter.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the meatballs and cook for about 8-10 minutes, turning occasionally until browned on all sides. Remove the meatballs and set aside.
- In the same skillet, add the remaining olive oil and chopped onion. Sauté for 3-4 minutes until softened, then add the minced garlic and cook for another minute.
- Pour in the crushed tomatoes and vegetable broth, stirring to combine. Bring to a simmer and add the cooked meatballs back into the skillet. Cover and let simmer for 10 minutes.
- Meanwhile, cook the pasta according to the package instructions until al dente. Drain and set aside.
- After the meatball sauce has simmered, stir in the cooked chickpeas and lemon juice. Adjust seasoning if necessary.
- Serve the meatballs and sauce over the pasta, garnished with additional parsley if desired.
