Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Halal chicken breast - 150 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1, chopped
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Cumin powder - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Tomato paste - 2 tablespoons
  • Vegetable broth - 300 ml
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
  3. Add minced garlic and diced chicken breast to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Stir in the chopped red bell pepper, carrot, and zucchini, and cook for another 5 minutes until the vegetables start to soften.
  5. Sprinkle in the cumin, cinnamon, paprika, salt, and black pepper. Stir well to coat the chicken and vegetables with the spices.
  6. Add the tomato paste and vegetable broth, stirring to combine. Bring the mixture to a simmer and let it cook for 5 minutes, allowing the flavors to meld.
  7. Add the cooked pasta to the skillet and toss gently to combine all the ingredients. Cook for an additional 2-3 minutes to heat through.
  8. Remove from heat and stir in fresh parsley and lemon juice before serving.
