- Pasta (fusilli or penne) - 200 grams
- Halal chicken breast - 150 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Red bell pepper - 1, chopped
- Carrot - 1 medium, diced
- Zucchini - 1 small, diced
- Cumin powder - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Tomato paste - 2 tablespoons
- Vegetable broth - 300 ml
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3 minutes.
- Add minced garlic and diced chicken breast to the skillet. Cook until the chicken is browned and cooked through, about 5-7 minutes.
- Stir in the chopped red bell pepper, carrot, and zucchini, and cook for another 5 minutes until the vegetables start to soften.
- Sprinkle in the cumin, cinnamon, paprika, salt, and black pepper. Stir well to coat the chicken and vegetables with the spices.
- Add the tomato paste and vegetable broth, stirring to combine. Bring the mixture to a simmer and let it cook for 5 minutes, allowing the flavors to meld.
- Add the cooked pasta to the skillet and toss gently to combine all the ingredients. Cook for an additional 2-3 minutes to heat through.
- Remove from heat and stir in fresh parsley and lemon juice before serving.
