Ingredients

  • Pasta (fusilli or penne) - 200 grams
  • Halal chicken breast - 150 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Carrot - 1 medium, diced
  • Canned tomatoes - 200 grams, crushed
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic, diced bell pepper, zucchini, and carrot to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.
  4. Stir in the diced halal chicken breast and cook until browned and cooked through, about 5-7 minutes.
  5. Add the crushed tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper to the skillet. Stir well to combine and let simmer for 5 minutes.
  6. Add the cooked pasta to the skillet and toss to coat with the sauce and vegetables. Cook for an additional 2 minutes to heat through.
  7. Remove from heat and stir in the fresh parsley and lemon juice. Serve hot, garnished with extra parsley if desired.
