Ingredients
- Pasta (fusilli or penne) - 200 grams
- Halal chicken breast - 150 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Canned tomatoes - 200 grams, crushed
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Bring a pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic, diced bell pepper, zucchini, and carrot to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.
- Stir in the diced halal chicken breast and cook until browned and cooked through, about 5-7 minutes.
- Add the crushed tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper to the skillet. Stir well to combine and let simmer for 5 minutes.
- Add the cooked pasta to the skillet and toss to coat with the sauce and vegetables. Cook for an additional 2 minutes to heat through.
- Remove from heat and stir in the fresh parsley and lemon juice. Serve hot, garnished with extra parsley if desired.
