  • Garlic (minced) - 2 cloves
  • Bell pepper (sliced) - 1 medium (about 150 grams)
  • Zucchini (sliced) - 1 medium (about 150 grams)
  • Carrot (julienned) - 1 medium (about 100 grams)
  • Berbere spice mix - 1 tablespoon
  • Canned diced tomatoes - 400 grams
  • Vegetable broth - 200 milliliters
  • Fresh parsley (chopped) - 2 tablespoons
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Cook the pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and stir for another minute until fragrant.
  4. Stir in the sliced bell pepper, zucchini, and carrot, cooking for about 5-7 minutes until the vegetables are tender.
  5. Sprinkle the berbere spice mix over the vegetables and stir well to coat, cooking for an additional 1-2 minutes to release the spices' flavors.
  6. Pour in the canned diced tomatoes and vegetable broth. Bring to a simmer and let cook for about 10 minutes, allowing the sauce to thicken slightly.
  7. Add the cooked pasta to the skillet, tossing to combine everything well. Season with salt and pepper to taste.
  8. Remove from heat, garnish with fresh chopped parsley, and serve hot.
