- Carrot (julienned) - 1 medium (about 100 grams)
- Berbere spice mix - 1 tablespoon
- Canned diced tomatoes - 400 grams
- Vegetable broth - 200 milliliters
- Fresh parsley (chopped) - 2 tablespoons
- Salt - to taste
- Pepper - to taste
Steps
- Cook the pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and stir for another minute until fragrant.
- Stir in the sliced bell pepper, zucchini, and carrot, cooking for about 5-7 minutes until the vegetables are tender.
- Sprinkle the berbere spice mix over the vegetables and stir well to coat, cooking for an additional 1-2 minutes to release the spices' flavors.
- Pour in the canned diced tomatoes and vegetable broth. Bring to a simmer and let cook for about 10 minutes, allowing the sauce to thicken slightly.
- Add the cooked pasta to the skillet, tossing to combine everything well. Season with salt and pepper to taste.
- Remove from heat, garnish with fresh chopped parsley, and serve hot.
