- Red onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Chickpeas (canned, drained) - 1 cup
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 3 minutes until softened.
- Stir in the minced garlic and cook for an additional minute until fragrant.

- Add the drained chickpeas, cumin, coriander, paprika, salt, and black pepper to the skillet. Stir well and cook for another 3-4 minutes to combine the flavors.
- Add the cooked pasta to the skillet, tossing everything together until well mixed. Drizzle with lemon juice and sprinkle with fresh parsley before serving.
