- Whole wheat pasta - 150 grams
- Chicken breast, diced - 200 grams
- Almonds, slivered - 30 grams
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Cinnamon powder - 1 teaspoon
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Fresh parsley, chopped - 2 tablespoons
- Lemon juice - 1 tablespoon
- Water - 500 ml
Steps
- In a large pot, bring 500 ml of water to a boil. Add the whole wheat pasta and cook according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
- Add the minced garlic and diced chicken to the skillet. Cook until the chicken is browned and cooked through, about 7-10 minutes.
- Stir in the cinnamon, cumin, paprika, salt, and black pepper. Cook for an additional 2 minutes to allow the spices to bloom.
- Add the slivered almonds and cooked pasta to the skillet, tossing everything together until well combined.
- Remove from heat and stir in the chopped parsley and lemon juice. Adjust seasoning if necessary.
- Serve warm, garnished with extra parsley and almonds if desired.
