- Whole wheat pasta - 200 grams
- Olive oil - 2 tablespoons
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Carrot - 1 medium, diced
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chickpeas - 100 grams, canned, rinsed and drained
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper, zucchini, and carrot to the skillet. Cook for about 5-7 minutes until the vegetables are tender.
- Stir in the ground cumin, paprika, cinnamon, salt, and black pepper. Cook for an additional 1-2 minutes to toast the spices.
- Add the rinsed chickpeas and cooked pasta to the skillet. Toss everything together until well combined and heated through.
- Remove from heat and stir in fresh parsley and lemon juice. Serve warm.
