Ingredients

  • Pasta (penne or fusilli) - 200 grams
  • Moroccan sausages (merguez) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion, finely chopped - 1 medium
  • Garlic, minced - 2 cloves
  • Red bell pepper, diced - 1 medium
  • Zucchini, diced - 1 medium
  • Canned diced tomatoes - 200 grams
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley, chopped - 2 tablespoons
  • Grated cheese (optional) - 30 grams

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Slice the Moroccan sausages and add them to the skillet, cooking until browned on all sides, about 5-7 minutes.
  5. Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until softened.
  6. Add the canned diced tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper. Stir well and let simmer for 5-7 minutes, allowing the flavors to meld.
  7. Add the cooked pasta to the skillet, tossing everything together to combine. Cook for another 2-3 minutes until heated through.
  8. Remove from heat and sprinkle with fresh parsley. Serve hot, with grated cheese on top if desired.
