- Pasta (penne or fusilli) - 200 grams
- Moroccan sausages (merguez) - 200 grams
- Olive oil - 2 tablespoons
- Onion, finely chopped - 1 medium
- Garlic, minced - 2 cloves
- Red bell pepper, diced - 1 medium
- Zucchini, diced - 1 medium
- Canned diced tomatoes - 200 grams
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley, chopped - 2 tablespoons
- Grated cheese (optional) - 30 grams
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute until fragrant.
- Slice the Moroccan sausages and add them to the skillet, cooking until browned on all sides, about 5-7 minutes.
- Stir in the diced red bell pepper and zucchini, cooking for another 5 minutes until softened.
- Add the canned diced tomatoes, ground cumin, ground coriander, paprika, salt, and black pepper. Stir well and let simmer for 5-7 minutes, allowing the flavors to meld.
- Add the cooked pasta to the skillet, tossing everything together to combine. Cook for another 2-3 minutes until heated through.
- Remove from heat and sprinkle with fresh parsley. Serve hot, with grated cheese on top if desired.
