Ingredients

  • Whole wheat pasta - 200 grams
  • Fresh spinach - 150 grams
  • Chickpeas (cooked) - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Feta cheese (crumbled) - 50 grams
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the cooked chickpeas, cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the chickpeas to absorb the spices.
  4. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
  5. Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the chickpeas and spinach.
  6. Pour in the reserved pasta water and lemon juice, then toss everything together until well combined. Cook for another 2 minutes to heat through.
  7. Remove from heat and serve topped with crumbled feta cheese and chopped parsley.
