- Whole wheat pasta - 200 grams
- Fresh spinach - 150 grams
- Chickpeas (cooked) - 100 grams
- Olive oil - 2 tablespoons
- Garlic (minced) - 2 cloves
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Feta cheese (crumbled) - 50 grams
- Fresh parsley (chopped) - 2 tablespoons
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in the cooked chickpeas, cumin, coriander, paprika, salt, and black pepper. Cook for an additional 2-3 minutes, allowing the chickpeas to absorb the spices.
- Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
- Once the pasta is cooked, reserve 1/2 cup of pasta water, then drain the pasta and add it to the skillet with the chickpeas and spinach.
- Pour in the reserved pasta water and lemon juice, then toss everything together until well combined. Cook for another 2 minutes to heat through.
- Remove from heat and serve topped with crumbled feta cheese and chopped parsley.
