- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Feta cheese - 50g, crumbled (optional, for topping)
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic, diced red bell pepper, and zucchini to the skillet. Cook for an additional 5 minutes until the vegetables are tender.
- Stir in the cooked chickpeas, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Cook for another 3-4 minutes to allow the flavors to meld.
- Add the cooked pasta to the skillet and toss well to combine all ingredients. Adjust seasoning if necessary.
- Remove from heat and stir in the chopped fresh parsley. Serve hot, topped with crumbled feta cheese if desired.
