  • Olive oil - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Feta cheese - 50g, crumbled (optional, for topping)

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic, diced red bell pepper, and zucchini to the skillet. Cook for an additional 5 minutes until the vegetables are tender.
  4. Stir in the cooked chickpeas, ground cumin, ground coriander, paprika, cinnamon, salt, and black pepper. Cook for another 3-4 minutes to allow the flavors to meld.
  5. Add the cooked pasta to the skillet and toss well to combine all ingredients. Adjust seasoning if necessary.
  6. Remove from heat and stir in the chopped fresh parsley. Serve hot, topped with crumbled feta cheese if desired.
