Ingredients
- Whole wheat pasta - 200 grams
- Olive oil - 3 tablespoons
- Onions - 2 medium, thinly sliced
- Garlic - 2 cloves, minced
- Chickpeas - 240 grams (canned, drained and rinsed)
- Cumin - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 15-20 minutes.
- Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
- Stir in the chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Cook for another 5 minutes to heat through.
- Add the cooked pasta to the skillet and toss everything together. Drizzle with lemon juice and mix well.
- Remove from heat and stir in the fresh parsley and feta cheese, if using.
- Serve warm, garnished with extra parsley if desired.
