Ingredients

  • Whole wheat pasta - 200 grams
  • Olive oil - 3 tablespoons
  • Onions - 2 medium, thinly sliced
  • Garlic - 2 cloves, minced
  • Chickpeas - 240 grams (canned, drained and rinsed)
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 15-20 minutes.
  3. Add the minced garlic to the skillet and sauté for an additional 1-2 minutes until fragrant.
  4. Stir in the chickpeas, cumin, cinnamon, paprika, salt, and black pepper. Cook for another 5 minutes to heat through.
  5. Add the cooked pasta to the skillet and toss everything together. Drizzle with lemon juice and mix well.
  6. Remove from heat and stir in the fresh parsley and feta cheese, if using.
  7. Serve warm, garnished with extra parsley if desired.
