Ingredients

  • Pasta (preferably whole wheat) - 150 grams
  • Green or brown lentils - 100 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery stalk - 1, diced
  • Cumin powder - 1 teaspoon
  • Coriander powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Vegetable broth - 500 ml
  • Fresh parsley - for garnish

Steps

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté for about 5 minutes until softened.
  3. Stir in the cumin, coriander, paprika, salt, and pepper, and cook for an additional minute to toast the spices.
  4. Add the lentils and vegetable broth to the pot, bring to a boil, then reduce the heat and simmer for 15 minutes until the lentils are tender.
  5. Meanwhile, cook the pasta according to package instructions in a separate pot until al dente. Drain and set aside.
  6. Once the lentils are cooked, combine them with the drained pasta. Stir well to mix and adjust seasoning if needed.
  7. Serve hot, garnished with fresh parsley.
