- Pasta (preferably whole wheat) - 150 grams
- Green or brown lentils - 100 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery stalk - 1, diced
- Cumin powder - 1 teaspoon
- Coriander powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Vegetable broth - 500 ml
- Fresh parsley - for garnish
Steps
- Rinse the lentils under cold water and set aside.
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, carrot, and celery, and sauté for about 5 minutes until softened.
- Stir in the cumin, coriander, paprika, salt, and pepper, and cook for an additional minute to toast the spices.
- Add the lentils and vegetable broth to the pot, bring to a boil, then reduce the heat and simmer for 15 minutes until the lentils are tender.
- Meanwhile, cook the pasta according to package instructions in a separate pot until al dente. Drain and set aside.
- Once the lentils are cooked, combine them with the drained pasta. Stir well to mix and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
