- Chickpeas (cooked) - 200 grams
- Fresh parsley - 30 grams, chopped
- Fresh cilantro - 30 grams, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, about 8-10 minutes.
- While the pasta cooks, heat the olive oil in a frying pan over medium heat and add the minced garlic, sautéing until fragrant, about 1-2 minutes.
- Add the cooked chickpeas to the frying pan, along with the ground cumin, paprika, salt, and black pepper. Stir well and cook for another 5 minutes until heated through.
- Once the pasta is cooked, drain it and add it to the frying pan with the chickpeas and spices. Toss everything together gently to combine.
- Remove the pan from heat and stir in the chopped parsley, cilantro, and lemon juice. Adjust seasoning if necessary.
- Serve the pasta warm, topped with crumbled feta cheese if desired.
