Ingredients

  • Whole wheat pasta - 150 grams
  • Chickpeas (cooked) - 200 grams
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Bring a large pot of salted water to a boil and cook the whole wheat pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a frying pan over medium heat and add the minced garlic, sautéing until fragrant, about 1-2 minutes.
  3. Add the cooked chickpeas to the frying pan, along with the ground cumin, paprika, salt, and black pepper. Stir well and cook for another 5 minutes until heated through.
  4. Once the pasta is cooked, drain it and add it to the frying pan with the chickpeas and spices. Toss everything together gently to combine.
  5. Remove the pan from heat and stir in the chopped parsley, cilantro, and lemon juice. Adjust seasoning if necessary.
  6. Serve the pasta warm, topped with crumbled feta cheese if desired.
