Ingredients
- Whole wheat pasta - 200 grams
- Canned artichoke hearts - 200 grams, drained and chopped
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, finely chopped
- Red bell pepper - 1, diced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
- Cooked chickpeas - 100 grams
- Feta cheese - 50 grams, crumbled (optional)
Steps
- Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and diced red bell pepper to the skillet. Cook for another 3-4 minutes until the peppers are softened.
- Stir in the chopped artichoke hearts, cooked chickpeas, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
- Add the cooked pasta to the skillet and toss everything together until well combined. Cook for another 2-3 minutes to heat through.
- Remove from heat and stir in the fresh parsley. If desired, sprinkle crumbled feta cheese on top before serving.
