Ingredients

  • Whole wheat pasta - 200 grams
  • Canned artichoke hearts - 200 grams, drained and chopped
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 medium, finely chopped
  • Red bell pepper - 1, diced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Cooked chickpeas - 100 grams
  • Feta cheese - 50 grams, crumbled (optional)

Steps

  1. Bring a large pot of salted water to a boil. Add the whole wheat pasta and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and diced red bell pepper to the skillet. Cook for another 3-4 minutes until the peppers are softened.
  4. Stir in the chopped artichoke hearts, cooked chickpeas, cumin, paprika, salt, and black pepper. Cook for an additional 5 minutes, stirring occasionally.
  5. Add the cooked pasta to the skillet and toss everything together until well combined. Cook for another 2-3 minutes to heat through.
  6. Remove from heat and stir in the fresh parsley. If desired, sprinkle crumbled feta cheese on top before serving.
