Ingredients

  • Whole wheat pasta - 200 grams
  • Chicken breast - 200 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Orange juice - 100 ml
  • Lemon juice - 50 ml
  • Zest of 1 orange
  • Zest of 1 lemon
  • Chickpeas - 100 grams, cooked
  • Fresh parsley - 30 grams, chopped
  • Cumin - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add the diced chicken breast to the skillet and cook until browned and cooked through, about 6-8 minutes.
  4. Stir in the orange juice, lemon juice, orange zest, lemon zest, cumin, and cinnamon. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  5. Add the cooked chickpeas and pasta to the skillet, tossing to combine everything well. Season with salt and black pepper to taste.
